Jen LeBow’s Shortbread Cookies
These take some time, because you need to figure in the hour of refrigeration, but they are worth it!
Combine:
2 sticks + 2 T softened butter
3/8 cup sugar
3/8 cup brown sugar
Add and combine: 2 ¾ cups flour
Shape into 3 square logs.
Sprinkle raw sugar on wax paper. Place one log at a time on the wax paper and roll log so all 4 sides are coated with raw sugar.
Wrap the logs tightly in plastic and refrigerate 1 hour.
Preheat to 350°
Remove from refrigerator and slice into ¼” thick squares. Lay flat on cookie sheet.
Bake 22 minutes.
