Jen LeBow’s “Sick” Soup
I am not of the generation where I use the word “sick” to mean anything good. This soup is a clear broth with ginger to soothe the stomach and dark leafy greens to provide important nutrition when someone is under the weather.
Heat 2 T water in large pot over medium heat.
Add 2 T minced fresh ginger
Saute water and ginger 1 minute
Add 14 cups vegetable (for vegan soup) or chicken broth (3 ½ quarts)
Heat on high to boil
Reduce heat to medium and simmer 5 minutes
Add
8 cups fresh spinach or kale, chopped
1 cup sliced mushrooms
2 T minced scallion
1 t minced garlic
Simmer 2-3 more minutes
