
Jen LeBow’s Sloppy Joe Recipe (adapted from The New Basics Cookbook)
In a large microwave-safe bowl or casserole dish, heat 2 T EVOO for 2 minutes on high.
Add:
1 finely chopped large rib of celery
1 cup minced onion
1 finely chopped small sweet red pepper
1 t dried oregano (or more of fresh if you have it)
Cook in the microwave 4 minutes on high.
Crumble in 1 lb. ground beef until it’s evenly distributed.
Cook 2 minutes. Stir, then cook another 3 minutes.
Stir in:
½ cup ketchup
½ cup tomato sauce (use homemade or your favorite jarred variety)
¼ cup water
1 T red wine vinegar
1 T balsamic vinegar
1 T Worcestershire
1 T brown sugar
¾ t salt
Cook 4 minutes, stir and cook another 2 minutes.
Serve on toasted kaiser rolls or however you like it!
